1/4 cup olive oil
1 large white or red onion, finely chopped
1 package extra firm tofu, excess water squeezed out and cut into 3/4 inch chunks
1 stalk celery, finely chopped
1 red bell pepper, finely chopped
1/3 cup vegan mayonaise, preferably Vegenaise
2 tablespoons spicy dijon mustard
1 tablespoon plus 1 teaspoon lemon juice
1 teaspoon dried dill or 1 tablespoon finely chopped fresh dill
1/2 teaspoon garlic powder
1/3 teaspoon sea salt
1/4 teaspoon black pepper
1/16 teaspoon turmeric
Saute the onion in the olive oil on medium-high heat until lightly browned. Add the tofu and cook thoroughly, turning over cubes occasionally. Remove from heat and place in a bowl to cool.
Stir in the remaining ingredients. Chill and serve chilled.
